PUMPKIN PARFAIT 
1 can (16 oz.) cooked pumpkin
1/8 tsp. nutmeg
1/4 tsp. cinnamon
1/8 tsp. ginger
1/4 tsp. rum extract, optional
Dash of cloves
2 env. unflavored gelatin
1/4 c. water
1 c. evaporated skim milk
4 tsp. sugar or sugar substitute equivalent

Combine the first 6 ingredients in large bowl; mix well. Set aside. Sprinkle gelatin over water in small pan to soften. Place over low heat and stir until gelatin has dissolved, about 3 or 4 minutes. Set aside.

Combine milk and sweetener in bowl; mix with rotary beater. Slowly pour in gelatin mixture and continue beating until stiff peaks form. Combine all ingredients and blend. Put into parfait glasses.
