COLLARD GREENS 
3-4 lb. collard greens
1 ham hock
2 c. water
1/2 lb. salt pork

Cook ham hock and salt pork together until almost done. Remove stems; wash greens thoroughly. Add greens to ham hock and salt pork mixture. Cover and cook until tender. Add more water if necessary.
