COLLARD GREENS 
4 bunches collards
1 tsp. salt
2 ham hocks or 1 lb. salt pork
1 tbsp. sugar
1 pod chili pepper
1/2 tsp. black pepper
2 tbsp. shortening

Wash and cut greens up; put in a pot with boiling water and let cook about 2 hours or until done.
