CHALLAH 
2 pkg. yeast
1 3/4 c. lukewarm water
1 tbsp. salt
1/2 c. sugar
1/4 c. oil, melted butter
3 c. flour
3 eggs plus 1 white (or equivalent egg substitute)
4 c. flour

Dissolve yeast in water for 5 minutes. Add salt, sugar and oil to yeast. Stir 3 cups flour beaten into mixture. Add eggs plus white (reserve yolk). Beat.

Gradually add 4 cups flour; knead until smooth and elastic (about 10 minutes). Let rise until doubled in greased bowl covered. Punch down, divide dough into strips and braid. Let rise on greased cookie sheet covered for 1 hour. Brush with egg yolk mixed with 1 teaspoon water. Sprinkle with sesame seeds.

Bake at 350 degrees for 35-40 minutes for 1 large loaf, 30 minutes for 2 small loaves.
