BURNT CARAMEL ICE CREAM 
4 eggs, well beaten
2 1/2 c. sugar
10 c. half and half
1 1/2 tbsp. vanilla
1/2 tsp. salt
1 to 1 1/2 c. packed brown sugar

In an old skillet burn the brown sugar. It will be bubbly and black looking on the top. When it gets burnt pretty good add 1 1/2 cups hot water to the sugar. Be careful and remove the skillet from the heat before adding the water. It will still bubble over - so be careful. Cool.

Beat eggs in large mixing bowl, add sugar gradually beating well after each addition. When mixture becomes very stiff add remaining ingredients and mix thoroughly. Pour into gallon freezer. Freeze as directed.

Note: The first time I ate some of this ice cream I did not like it. It had a bitter taste but I finished the bowl and I have discovered that this is one of my favorite homemade ice creams.

When you burn the brown sugar you may discover how good your smoke detector works. It will smoke up your kitchen.

You can use your favorite vanilla ice cream recipe and then just add the burnt sugar to it.
