ROAST CHICKEN 
1 (5 to 6 lb.) roasting chicken
1/4 c. chopped parsley
2 tbsp. lemon juice
1 tsp. dried thyme leaves
1 tsp. salt
1/2 tsp. ground sage
1/4 tsp. black pepper
Onion, quartered
Celery

Preheat oven to 400 degrees. Clean chicken and dry. Mix together herbs and lemon juice. Rub over outside of chicken and inside cavity. Place in roasting pan breast side up. Put a few celery sticks and onion in cavity. Roast 20 minutes. Baste. Roast occasionally, basting 50 minutes. May make foil tent.
