MEAT CROQUETTES 
1 c. scalded milk
3 tbsp. flour
3 tbsp. melted butter
1/2 tsp. salt
Pepper to taste
2 c. ground leftover roast beef
Salt and pepper
2 tbsp. water
1 egg, slightly beaten
Dry bread crumbs

Make thick white sauce with milk, flour, butter, and salt and pepper to taste. Combine meat and white sauce. Season to taste. Mix thoroughly. Cool. Shape into balls, cones or cylinders. Roll in bread crumbs. Dip in egg diluted with water. Roll in crumbs again. Fry in deep fat (385 degrees) until brown. Drain on crumpled paper towels. Makes 8 servings.
