SOUTHWEST SKILLET 
2 pkgs. cornbread mix
1 med. onion (chopped)
2 cloves garlic, finely chopped
1 can (28 oz.) tomatoes (chopped)
1 tbsp. basil
2 tsp. sugar
1 tsp. oregano
1 bell pepper (chopped)
1 can green chilies
8 oz. round turkey or ground beef
2 tsp. chili powder
1 c. shredded Cheddar cheese
1 can whole kernel corn or hominy (drained)

(Preheat oven, grease 10 inch skillet or 13x9 pan.)

Mix cornbread as directed on package. Saute onion and garlic. Add tomatoes, basil, sugar and oregano. Simmer for 6 minutes; set aside.

Brown meat. Add pepper and chili power. When meat is done add hominy or corn. Mix tomato mixture with meat.

Place half of cornbread mixture in skillet or 9x13 pan. Put meat-tomato mixture on top and place cheese on top of this. Then add other half of cornbread mixture. Bake at 350 degrees for 35 to 40 minutes or until golden brown on top.
