GARLIC AND POTATOES 
6 to 7 sm. red potatoes, quartered
10 whole garlic cloves, unpeeled
2 tbsp. olive oil
Sprinkle of fresh thyme or dry
1 tbsp. white wine
Fresh pepper
Sprinkle of salt

Preheat oven. Put all ingredients into a baking dish. Dribble with olive oil and wine. Cover tightly with foil and bake one hour at 350 degrees. Serves 2 to 4.

This easy tasteful dish is not over powered with garlic, but flavored just right. Slip the cooked garlic out of its skin (discard the skin) and it makes a nice spread on a hearty bread or crackers.
