POTATOES AU CITRON 
1 1/2 lbs. new or red potatoes
1/4 c. butter
1 tbsp. olive oil
1 tbsp. minced green onion
1 tbsp. chopped parsley
1 tsp. thyme
Salt and pepper to taste
Juice and grated rind of 1/2 lemon

Cook potatoes (peel optional). In a sauce pan, melt butter, add seasonings. Pour heated sauce over hot potatoes. Serves 4 to 6.
