6 med. red potatoes 1 tbsp. grated onion 1/8 tsp. salt 1 tbsp. chopped parsley 1/2 tsp. thyme 1 1/2 c. shredded cheddar cheese 1/4 c. melted butter Scrub potatoes, pierce twice with fork. Microwave at high for 12 minutes. Mix remaining ingredients except the butter. Cool potatoes. Do not peel. Slice thinly. Arrange slices in flat glass dish. Brush with melted butter. Sprinkle other ingredients over and microwave on high for 2 minutes. |
