BUTTERSCOTCH PIE | |
1 baked pie shell 1-1/2 c. brown sugar 1-1/2 c. boiling water 1/4 c. cornstarch 1/4 c. cold water 2 tbsp. granulated sugar (white) 3 tbsp. melted butter 1/4 tsp. salt 3/4 tsp. vanilla 3 egg yolks Meringue Caramelize the white sugar, add brown sugar and boiling water and cook for about 5 minutes. Beat cornstarch into the cold water and add to mixture. Add salt, continue cooking and stirring until mixture thickens. Then add butter, cool slightly, and add beaten egg yolks and vanilla. Pour into pie shell, meringue and brown. |
