MEXICAN CHICKEN 
1 chicken, boiled and deboned
1 onion, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1-2 cans chicken broth
1 can Rotel tomatoes (diced)
1 or 2 c. shredded cheddar cheese
1 pkg. Doritos (nacho cheese flavor)

In a 9x13 baking dish, layer onion and chicken. Mix soup, Rotel tomatoes and broth. Pour over chicken. Crush Doritos and sprinkle over mixture. Finish with cheese on top. Bake at 350 degrees for 30-45 minutes.
