BREAKFAST CASSEROLE 
10 slices white bread, crusts removed
2 to 3 tbsp. butter
1/2 lb. fresh mushrooms, sliced
1 1/2 c. chopped onions
Salt and pepper
1 1/2 to 2 lb. Italian sausage, sliced or crumbled
6 beaten eggs
2 1/2 c. milk
3 tsp. prepared mustard
1 tsp. dry mustard
1 tsp. grated nutmeg
2 tbsp. chopped parsley
3/4 to 1 lb. grated Cheddar cheese

Saute mushrooms and onions together in butter. Cook sausage. Combine eggs with milk and seasonings. Layer 1/2 of the bread in a 9 x 13 inch casserole, cover with mushrooms and onions, sausage and 1/2 of the cheese. Cover with the remaining bread, cheese and parsley.

Pour egg mixture over the top. Refrigerate overnight. Bake 1 hour in a 325 degree oven.
