BROCCOLI CASSEROLE 
1 sm. onion, chopped
2 (10 oz.) boxes frozen chopped broccoli
1 stick butter
1/2 lb. Velveeta cheese
1/4 lb. Ritz crackers

Saute onion. Cook broccoli as directed on package; drain. Add onion, 1/2 stick butter, 1/2 pound Velveeta cheese. Stir until cheese melts. Put in greased casserole. Crush 1/4 pound Ritz crackers, mix with remaining 1/2 stick melted butter. Spread over top of casserole. Bake at 350 degrees for 20 to 30 minutes.
