BROCCOLI - CHEESE CASSEROLE 
2 pkg. frozen chopped broccoli
1 stack Ritz crackers
1/2-1 lb. Velveeta cheese, sliced
1/4 lb. butter

Cook broccoli, without salt and drain. Crumble crackers and saute in melted butter. Grease casserole dish and layer broccoli, sliced cheese and sauteed crackers. Bake at 350 degrees for 30 minutes until lightly browned and bubbly around edge. Even those who don't like broccoli will come back for seconds!
