PASTA SALAD | |
8 oz. pasta (fussili or shells) 1/2 c. sliced green onion 1/2 c. chopped fresh parsley 1 c. sliced celery 1 c. frozen peas 1 c. diced tomato 1 c. sliced black olives 1/2 c. mayonnaise 2 tbsp. soy sauce 2 tbsp. lemon juice 2 tbsp. red wine vinegar 1 tsp. Dijon mustard 1 tsp. garlic powder 1/2 tsp. paprika 1/2 tsp. ground ginger 1/8 tsp. red hot pepper sauce 1/8 tsp. freshly ground black pepper 3 c. sliced cooked chicken OR 2 c. cooked shrimp Cook pasta according to directions on package until just tender. (Don't overcook.) Rinse with cold water; drain. Place in large bowl. Add onion, parsley, celery, peas, tomato and olives. Combine mayonnaise with soy sauce, lemon juice, vinegar, mustard, sugar, garlic powder, paprika, ginger, pepper sauce and black pepper. Add to pasta mixture, along with chicken or shrimp. Mix well. Adjust seasonings. Chill overnight. |
