PUMPKIN APPLESAUCE BREAD | |
2/3 c. vegetable shortening 2 1/2 c. sugar 4 eggs 1 (16 oz.) can applesauce 1 c. pumpkin 3 1/3 c. flour 2 tsp. baking soda 1 tsp. salt 1/2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. mace 1/2 c. nutmeg 1 (6 oz.) can apple juice 1/2 c. walnuts or pecans Grease 2 loaf pans. In large bowl, beat shortening and sugar with electric mixer until creamy. Add eggs, one at a time, beating well after each. Fold in applesauce and pumpkin. Mix together flour, baking soda, salt, baking powder, and spices. Stir into pumpkin mixture, alternating with apple juice; fold in nuts. Divide between two pans. Bake at 350 degrees for 1 hour until tester comes out clean. |
