POTATO CHEESE SOUP 
3 tbsp. butter
2 c. chopped onion
1 clove garlic, minced
2 lg. potatoes, chopped
3 c. chicken broth
4 oz. cream cheese
1 1/2 c. milk
1 c. grated sharp cheddar cheese
Salt and pepper to taste
Fresh parsley

Saute onions and garlic in butter. When onions are transparent, add potatoes and saute for 10 minutes. Add chicken broth and simmer until potatoes are tender. Puree. Return mixture to pot and melt in cream cheese and cheddar cheese. Add milk. When thoroughly warm, add salt and pepper to taste. Garnish with parsley.
