POTATO QUARTERS | |
1 lb. small firm potatoes 2 tbsp. butter Salt and pepper to taste 2 tbsp. butter 2 tsp. garlic powder 1 c. chopped onion Scrub potatoes well, do not peel. Steam or boil until cooked through, about 20 minutes. Cool. This can be done several hours in advance. Just before serving, cut potatoes in quarters. Melt butter in large saute pan over medium- high heat. When butter begins to sizzle, add potatoes, garlic and onions. Shuffle pan vigorously back and forth across the burner, saute until golden brown on all sides. Serves 4 to 6. |
