IRISH TEA SCONES 
2 c. sifted flour
2 1/2 tsp. baking powder
2 tbsp. sugar
1/4 tsp. salt
6 tbsp. butter
1 egg
1/2 c. milk
1 egg yolk
2 tbsp. water

Combine flour, baking powder, sugar and salt. Sift into a large mixing bowl. Use 2 knives or fingers to blend in the butter until crumbly. Mix in egg and milk. Stir into flour mixture to make a stiff dough. Knead on a floured board for 8-10 turns. Pat the dough flat and cut into rounds with a cookie cutter or rim of glass, or cut into triangles.

Blend together the egg yolk and the 2 tablespoons water. Brush the tops of the scones using a pastry brush in the mixture. Bake at 425-450 degrees for 12-15 minutes until golden. A tasty treat for breakfast.
