CUCUMBER SALAD 
1 lg. cucumber
8 oz. plain yogurt
Fresh mint to taste
1 clove garlic, chopped
Juice of 1/2 lemon
2 tbsp. olive oil
Salt and pepper to taste

Peel cucumber, cut into big cubes and put into a salad bowl. Pour the yogurt into a bowl and mix well, until smooth. Add garlic, fresh mint to taste and lemon juice. Add oil, salt and pepper; mix well. Pour sauce over cucumbers. Refrigerate approximately 1 hour before serving. Garnish with leftover mint sprigs.
