POTATO SALAD 
2 1/2 to 3 lb. potatoes, peeled and diced
1/2 c. sugar
1 tsp. cornstarch
1 tsp. salt
1 tsp. pepper
2 eggs
1/2 c. cream or half and half
1/4 c. vinegar
1 tsp. mustard
1 tbsp. butter
1 c. mayonnaise
2 tbsp. onion, chopped
4 eggs, hard-boiled and sliced

Cook potatoes until soft. Beat eggs; add sugar, cornstarch, salt, pepper, cream, vinegar and mustard. Cook until thick. Add butter and mayonnaise.

Mix onion and eggs with potatoes. Pour hot mixture over and blend thoroughly. Chill several hours.

Serves 8.
