ITALIAN MEAT LOAF 
2 lbs. ground beef
2 c. bread crumbs
1/2 c. chopped onion
1/4 c. Parmesan cheese
2 eggs, slightly beaten
1 tsp. salt
1/4 tsp. pepper

SAUCE:

1/2 tsp. oregano
1 (8 oz.) tomato sauce
1 (4 oz.) Mozzarella cheese

Combine meat, bread crumbs, onion, Parmesan cheese, eggs and seasonings. Mix lightly. Press mixture into a 13 x 9-inch baking pan. Bake at 350 degrees for 30 minutes. Pour off drippings.

Combine tomato sauce and oregano; pour mixture over meat loaf. Top meat loaf with Mozzarella cheese. Bake for 30 more minutes.
