ITALIAN MEATLOAF 
1 1/2 lbs. ground beef
1/2 c. tomato juice
1 c. bread, diced
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. oregano
2 cloves garlic (or 1 tsp. garlic powder)
2 tbsp. parsley
4 slices ham
4 slices Swiss cheese

Combine all but the ham and cheese. Spread mixture on a 10 x 18 inch sheet of aluminum foil. Form a rectangle with the mixture maintaining a 3/4 inch thickness. Place the ham and cheese slices alternately on the mixture forming a checkerboard pattern.

Lift the lower right edge of foil and tuck the lower right corner of meat over to begin a roll. Continue lifting foil and rolling mixture diagonally from right to left (in a jelly roll fashion). Pinch ends together and press the top slightly to seal.

Bake in a shallow, foil covered pan at 325 degrees for 1 hour. Can glaze the top with a mixture of ketchup and brown sugar for the last 10 minutes of baking.
