ITALIAN MEATLOAF 
1 1/2 lbs. ground beef
1/2 c. bread or cracker crumbs
1 can (8 oz.) tomato sauce (divided)
1 egg
1 tsp. oregano (divided)
1 tsp. salt
1/8 tsp. pepper
1 1/2 c. shredded Mozzarella cheese
2 tbsp. grated Parmesan cheese

Mix beef, crumbs, half sauce, egg, 1/2 teaspoon oregano, salt and pepper on wax paper. Pat into a rectangle 1/2 inch thick. Sprinkle with Mozzarella. Roll up and lift paper as you go.

Seal edges and place in loaf dish. Microwave on High 9 minutes rotating after half of time. Reduce power to 50%. Cook 11-14 minutes. Rotate after half time. (Drain.)

Combine remaining tomato sauce and oregano and pour over meatloaf. Sprinkle with Parmesan. Cook 2 more minutes. Tent with foil and let stand 5 minutes. Total time: 22-25 minutes. Standing time: 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
