ROASTED POTATOES 
1 tbsp. olive oil
1 clove garlic, crushed
1/4 tsp. freshly ground pepper
1 1/2 lb. sm. red potatoes, washed and quartered
1 tbsp. parsley

Preheat oven to 425 degrees. Mix oil, garlic and pepper in cookie pan. Add potatoes, turning to coat with oil mixture. Bake until tender, 30-40 minutes. Sprinkle with parsley.
