PORK ROAST IN GIN 
1/3 c. frozen orange juice
1/3 c. gin
3 tbsp. sugar
1 tbsp. soy sauce
1/4 tsp. ground ginger
1 clove garlic, minced
1/8 tsp. pepper
1 1/2 lb. boneless pork roast
4 sm. onions, quartered
Orange slices (optional)
Scallions (optional)

In a 7 x 11 inch baking dish, stir together orange juice concentrate, gin, sugar, soy sauce, ginger, garlic and pepper.

Pierce pork roast with fork in several places. Add pork and onion to baking dish, turning roast until coated with marinade. Let stand 1 hour or more, turning roast occasionally.

Preheat oven to 350°F and bake for 1 1/2 hours.

Garnish roast with orange slices and scallions, if desired.
