8 oz. tofu 1 c. brown sugar 1/2 c. safflower oil 4 tsp. cocoa 1/2 c. white or whole wheat flour 2 eggs separated (whites only, equivalent to 1/4 c.) 1/8 tsp. cinnamon 1 tsp. vanilla 1/2 c. chocolate morsels 1/2 c. chopped walnuts (optional) Preheat oven to 350 degrees. In a food processor, blend tofu to a soft consistency. Add brown sugar, flour, cocoa and cinnamon to the softened tofu and blend for 30 seconds. Then pour in safflower oil, egg whites and vanilla extract and blend for 30 more seconds. Finally add the chocolate morsels, and if desired the chopped walnuts. Blend for 30 seconds. In a lightly oiled 6x8 inch baking pan, dusted with flour (or a nonstick spray if preferred) distribute the brownie mix evenly across the bottom of the pan. Place brownies in 350 degree oven and bake for 15 minutes. Cool, cut into squares. Makes 12 squares. |
