CHICKEN AND GARLIC BUTTER 
2 tbsp. olive oil
1 1/2 lb. cubed chicken
12 oz. sliced mushrooms
1 tbsp. minced garlic
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. butter
1/4 c. chopped fresh parsley
1/4 c. chicken broth

Heat oil in large skillet or wok over high heat. Reduce heat to medium heat, add chicken and mushrooms, saute 3 minutes. Add the garlic, salt, and pepper. Stir fry 3 minutes, stirring constantly until chicken is cooked. Add butter, parsley and chicken broth, stir for 1 minute. Serve immediately over rice. 4 servings.
