LAYERED VEGETABLE SALAD | |
6 c. lettuce, torn into pieces 10 oz. pkg. frozen peas, thawed 2 c. thinly sliced cauliflower 1 c. shredded carrot 2 c. cherry tomatoes, halved Paprika to taste 1 c. shredded mozzarella cheese 1/2 c. plain non-fat yogurt 1/3 c. Miracle Whip, reduced calorie 2 tbsp. sliced green onion In a large glass bowl layer half of the torn lettuce. The peas, cauliflower and carrots. Add remaining lettuce and tomato halves. Sprinkle with cheese. Stir together yogurt and mayonnaise, then spread over top of salad. Cover and chill several hours or overnight. Sprinkle with green onion and paprika. Toss before serving. Makes 12 servings. Approximately 28 calories per serving. 1/2-3/4 cups = 1 vegetable serving. |
