SKILLET MEATLOAF 
2 lbs. ground beef
3/4 c. fresh bread crumbs (3 slices bread)
1/3 c. milk
1/4 c. catsup
2 eggs, beaten
1 tbsp. dehydrated onion flakes
1/2 tsp. garlic salt
1/2 tsp. Tabasco sauce
1 tbsp. butter
3 slices Cheddar or American cheese, cut in half
Green pepper rings

In large bowl, combine ground beef, bread crumbs, milk, catsup, eggs, onion flakes, garlic salt and Tabasco sauce; mix well.

In 10 inch skillet, melt butter; remove from heat. Press ground beef mixture into skillet. Cook over low heat about 20 minutes, until lightly browned. Drain liquid. Place plate over skillet; turn meat over onto plate. Slice meat off plate back into skillet. Cook about 15 minutes longer, or to desired degree of doneness.

Arrange cheese slices over meat. Cover skillet. Cook 5 minutes longer or until cheese is melted. Garnish with green pepper rings. Serve with additional Tabasco sauce if desired. Yield: 6 servings.
