HITACHI CRAWFISH JAMBALAYA 
1 c. raw rice
1 can chicken broth
3/4 stick butter, melted
1 lb. crawfish tails
1/4 med. bell pepper, chopped
1/4 med. onion, chopped
Tony Chachere seasoning
1 (4 oz.) can mushrooms

Combine rice, chicken broth, and butter in a Hitachi electric rice cooker. Drain liquid from mushrooms, chop and add to mixture. Cut crawfish tails in half and add to the mixture with bell pepper and onion. Season to taste. Cover and push button for cook cycle. Serve with salad and garlic bread.

Wash rice and drain well unless otherwise indicated.
