Cream 1/2 pound butter with 2 cups sugar. Add 3 eggs, mix well. Add 2 teaspoons vanilla and 1 pound ricotta cheese. Sift 4 cups flour, 1 teaspoon baking soda, and 1 teaspoon salt. Add a little at a time to creamed mixture, stir well. Drop by teaspoons on a greased cookie sheet. Bake at 350 degrees for 15 minutes. DO NOT OVER BAKE. Cookies will be pale.
Frost while cookies are warm with mix of confectioners' sugar and milk. Sprinkle each cookie before the frosting dries, with colored sprinkles or coconut. Approximately 11 dozen cookies.
