SOFT BISCOTTI (COOKIES) 
9 c. flour
1 1/2 c. sugar
1 3/4 c. Crisco
5 eggs
3 tbsp. baking powder
1 c. milk, heated
1 tbsp. vanilla

Mix dry ingredients together, then add Crisco as in pie dough. Make hole in center of dry ingredients and add beaten eggs, milk and vanilla. Mix well. Roll 2 inches long. bake 400 degrees about 10 minutes. Do not over bake.

FROSTING:

2 lb. powdered sugar
1 stick butter
1 1/2 tbsp. lemon or vanilla extract
3/4 c. milk

Blend.

Can't believe that anyone is still eating hydrogenated fat since the studies which linked it to cancer and heart disease, and since the FDA proposed removing it completely from the American diet. Read in the International New York Times that the Center for Science has said that there is no safe limit for trans fatty acids like hydrogentated fat in the diet. The article said that even a small amoung like a gram or two is damaging. Wake up America.

I would use coconut oil in place of Crisco if I were to use this recipe. Coconut oil is supposed to be a healthy alternative to butter and cooking oil. I make coconut biscotti, but don't have a standard recipe as of yet. I just substitute, use unsweetened shredded coconut along with the coconut oil substitute. People love them.
