YAM SUPREME 
4 lbs. cooked yams, peeled
1/4 c. butter, melted
3 tbsp. heavy cream
2 tbsp. brown sugar
1/4 tsp. ground cinnamon
1/4 tsp. ground allspice
1/4 tsp. salt
1 egg
1 (13 1/2 oz.) can pineapple chunks, drained (reserve juice)
3 ripe bananas, peeled and sliced
2 tbsp. honey
1/4 c. orange juice
1/3 c. sweetened coconut

Heat oven to 350 degrees. Mash yams. Beat in melted butter, cream, brown sugar, cinnamon, allspice, salt and egg. Spread potato mixture in bottom of well greased 1 1/2 quart shallow baking dish. Top with a layer each of pineapple and bananas.

Mix honey, orange juice and 1/4 cup reserved pineapple juice; drizzle over potatoes and fruit. Bake uncovered in oven for 15 minutes. Sprinkle with coconut. Return to oven and bake until coconut is golden brown.
