GREEN RICE 
2 c. uncooked rice
3 onions, chopped
1 c. fresh parsley, chopped
2 green peppers, chopped
1 clove garlic
2/3 c. Wesson oil
2 beaten eggs
2 c. grated Cheddar
2 c. evaporated milk

Cook rice. Saute onions, parsley, green pepper and garlic in oil. Mix all together with the rice, eggs, cheese and milk. Put in a greased casserole and dot with butter. Bake at 350 degrees for 45 minutes. 16 servings.
