GREEK BRAISED CHICKEN 
2 tsp. vegetable oil
1 1/2 lb. chicken parts
1/4 tsp. salt
Dash pepper
3/4 c. diced onions
1 tsp. minced garlic
2 med. tomatoes, blanched, peeled, seeded, chopped
1/4 c. chicken broth
1 tbsp. tomato paste
2 inch cinnamon stick

In a large skillet, heat oil. Add chicken and brown on all sides. Remove chicken to a plate and sprinkle with salt and pepper. Saute onions with garlic until lightly brown. Stir in remaining ingredients and bring to a boil. Return chicken to skillet. Reduce heat, cover and simmer for 35 minutes, basting occasionally. Remove cover and simmer until chicken is tender, about 5 minutes. Remove cinnamon stick.
