SOUTH OF THE BORDER CASSEROLE 
1 lb. ground beef
3 tbsp. butter
3 green onions, chopped fine
1 bell pepper, chopped
1 can chili no beans
1 can cream of mushroom soup
1 can hominy
2 c. sharp Cheddar cheese
Crushed corn or tortilla chips
Salt & pepper to taste

Saute onion and bell peppers in butter until limp. Add ground beef and garlic, then drain well. In large bowl, mix meat with chili and mushroom soup and homily. Pour mixture in large casserole dish. Top with cheese and chips. Bake for 45 minutes in 350 degree oven.
