MEAT LOAF MOZZARELLA 
1 1/2 lbs. lean ground beef
1 egg
3/4 c. Pepperidge stuffing (herb flavored)
1/2 c. onion, finely chopped
2 (8 oz.) cans tomato sauce
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. oregano
2 c. shredded Mozzarella cheese

Combine ground beef, egg, stuffing, onion, 1/3 cup tomato sauce, salt, pepper and oregano together. Mix well and shape into flat rectangle, 10"x12" on waxed paper. Sprinkle cheese evenly over meat mixture. Roll (using wax paper) up like a jelly roll and press ends together to seal. Place in a large bread pan. Bake at 350 degrees for 1 hour. Drain off fat and then pour remaining tomato sauce on meat and bake 15 minutes longer.
