MICROWAVE ZUCCHINI MOZZARELLA 
1 1/2 lb. sliced zucchini
1/4 c. water
1/2 tsp. salt
4 oz. Mozzarella slices
4 oz. can tomato sauce
1/4 tsp. Italian seasoning
Parmesan cheese

Place zucchini and water in 3 quart casserole. Cover with waxed paper. Microwave on high 15 minutes. Stir once during cooking time. Drain and add salt. Place slices cheese over drained zucchini. Pour tomato sauce and seasoning over cheese and top with Parmesan. Cook high 3 minutes. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
