MOZZARELLA VEGETABLE SALAD 
2 c. chopped tomatoes
1 c. chopped zucchini
1 c. Mozzarella cheese
1/3 c. sliced olives, drained
1/4 c. Italian salad dressing
2 avocados
Lemon juice

Combine tomatoes, zucchini, 1/2 cup cheese, olives and salad dressing. Stir until well coated and combined.

Prior to serving, peel and slice avocados, dip each slice in lemon juice. Arrange avocados slices on serving platter. Place vegetable cheese mixture on top of avocados. Sprinkle with remaining cheese and serve.
