SPECIAL CHRISTMAS SALAD 
1 pkg. (3 oz.) lime Jello
1 c. hot water
1 c. well drained crushed pineapple
1 sm. can pimientos, chopped
1 tbsp. horseradish
1 lb. carton (2 c.) cottage cheese
A few drops of green food coloring

Dissolve Jello in hot water and chill until partially set. Stir in remaining items. Pour into a 5 cups container or mold. Chill until firm. Makes 6 good servings, put on lettuce of side dish. Very good dish.

NOTE: I use the pineapple juice and enough water to make a cup and boil this, it gives it more flavor.
