LEMON COCONUT PIE | |
1 3/4 c. graham cracker crumbs 1/4 lb. butter, melted 4 1/2 tbsp. sugar Mix together and press in buttered 10 inch pie plate. Bake at 350 degrees for 8 minutes. FILLING: 2 cans sweetened condensed milk 1 c. lemon juice 1 c. coconut 4 egg yolks Mix together and pour into baked pie crust. TOPPING: 4 egg whites 8 tbsp. sugar Beat until stiff and spread on top of filling. Sprinkle with coconut and bake at 350 degrees until brown, about 7 minutes. Very rich and very good. |
