LEMON SQUARES 
CRUST:

1 c. flour
1/2 c. butter
1/4 c. powdered sugar

FILLING:

1 c. sugar
2 tsp. grated lemon peel, if desired
2 tbsp. lemon juice
1/2 tsp. baking powder
1/4 tsp. salt
2 eggs

Mix flour, confectioners' sugar and butter. Press into 8x8x2 pan (ungreased). Bake 20 minutes, 350 degrees.

Meanwhile, beat remaining ingredients until fluffy. Pour over hot crust. Bake until no indentation remains when center is lightly touched, about 25 minutes. Makes 25 1 1/2 inch squares.
