CRAWFISH STUFFED BELL PEPPERS 
8-10 bell peppers
1 lb. ground meat
1 stick butter
1 med. onion, chopped fine
1 rib celery, chopped fine
Bell pepper tops, chopped
1 lb. crawfish, chopped
1 egg
1 1/2 c. water
1 pkg. Pepperidge Farm dressing mix
2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. garlic powder
1/2 tsp. red pepper

Parboil peppers for 5 minutes. Brown ground meat. Set aside. In small skillet, melt butter and saute onions, peppers and celery until clear. Add crawfish to mixture. Saute and set aside.

In large bowl mix dressing mix, egg, water, salt, garlic powder, black pepper and red pepper. Add meat and crawfish tails to this. Blend well. Stuff into peppers. Bake 45 minutes at 305 degrees.
