STUFFED BELL PEPPER 
6 lg. green peppers (stems & seeds removed & cut in 1/2)
1/2 lb. ground beef
1 c. bread crumbs
1 tsp. salt
1/4 tsp. pepper
1 tbsp. chopped onion
1/2 c. cooked rice
1 can tomato soup
May add shrimp (with ground meat)

Cook peppers in boiling water for 5 minutes. Drain. Mix all other ingredients except 1/2 can soup. Stuff peppers. Stand peppers upright in a shallow baking dish. Pour over remaining soup mixed with 1/2 cup water. Bake covered 45 minutes; uncovered 15 more minutes at 350 degrees.
