GERMAN PANCAKE 
4 eggs
4 tbsp. flour
1 1/2 tbsp. sugar
1/2 c. milk
Pinch salt
2 oz. butter or half bar
1 lemon, juice only
1/4 c. granulated sugar
1/4 tsp. cinnamon
Powdered sugar for top

Heat oven to 425 degrees. Beat eggs, flour, sugar, milk and salt. Heat a 9" frying pan with 1/2 bar butter. Let it melt but not brown. Add the batter and bake 7 minutes, reduce heat to 375 degrees. Bake for 8 more minutes. The pancake should not be too brown, but puffed up. Remove from oven, sprinkle with sugar, cinnamon mixture and lemon juice. Dust with powdered sugar. Transfer to plate. Serves 4.
