1 doz. ears fresh corn (uncooked) 1 1/2 lbs. shell beans (red and white speckled) (fresh lima beans can be substituted) 1 onion, chopped 1/4 lb. salt pork (ground up fine or left if 1 piece, scored and fried) 2 tbsp. butter Brown sugar, salt and pepper to taste 1. With sharp knife cut in downward motion, the corn off the cob. Scrape well to get the milk in the bowl. 2. Fry chopped onion in butter, add the pork and beans. Cover with water and cook until beans are tender, not soft. 3. Add cut up corn - cook again until corn is tender. 4. Add seasonings and blend. If mixture is too thick water or milk may be added when reheated. NOTE: Shell beans are not always available. Some local farmers raise them. |
