POPCORN CHICKEN (JUST LIKE
KFC!!)
 
1 egg
1 cup all-purpose flour
1 tsp. Cajun seasoning
2 small boneless chicken breasts
3/4 cups vegetable oil (or any other frying oil)
2 paper towels

Mix flour and Cajun seasoning in small mixing bowl.

In separate bowl, beat egg.

Cut chicken breasts in small pieces ranging anywhere from about a 1/2 inch to 1 1/2 inch in size, depending on how crispy you want (smaller=crispier).

Pour oil into a small skillet and place on a medium heat.

Dip pieces of chicken into egg, being sure they are fully covered.

Drop the chicken, piece by piece into the flour mixture, fully coating the chicken.

Test to be sure that the oil is ready by dropping a little glob of batter into the oil. If it sizzles and fries, it's ready! Now, slide the chicken into the skillet, easily and slowly to be sure the oil doesn't splatter all over you. Do this as quickly as possible. After about 3-4 minutes, flip the pieces over (pieces should be colored a light golden brown).

When chicken is finished, scoop it out draining as much oil as possible into the pan for more chicken and place it on a plate with the two paper towels lining the bottom.

This will catch and drain the excess oil so your chicken is super crunchy.

My best serving suggestion is buttermilk biscuits, mashed potatoes, and gravy.

I usually buy from an Asian grocer but thought I would give this a try. Doubled the Cajun seasoning and added the garlic salt. Yum. If you want to try this, its worth it for prep time. I add half of the flour mix to the washed chicken in a large bowl, beat the eggs & pour straight over the floured chicken, stir to a sloppy mess. Now gradually stir in the remaining flour until you have a really heavy mix. Then simply use tongs to drop pieces straight into the deep fryer. Will never buy the store bought stuff again..

Thank you! Best popcorn chicken ever! I made mine with garlic salt but I followed the rest of your recipie. Chicken was soft and crunchy on the outside. I put some cornstarch before adding batter and made the chicken itself soft. Thanks again!

Great recipe. I have tried the double dipping it works great.. My family loves it.. Instead of using Cajun seasoning i've used my own blend of seasoning: salt, cayenne pepper, just a small shake of it, a shake of garlic powder and that works great too....

Hey,

I thought this was great, the amount of time to make them probably isn't worth it but its a great fried chicken recipe.

I recommend adding more cajun seasoning like shawn tried and also adding a pinch of salt, I found the seasoning very plain and salt added a bit of flavour.

I decided to add yoghurt to the egg also, to try making it thicker, it worked pretty well. I also recommend double dipping the chicken, so:

chicken into egg then flour and then repeating this process, it makes the batter much thicker and tastier!
